Kale Is Catching On

Açai berries took the health food trend by storm a few years ago, and now kale is stealing the spotlight becoming known as "the Superman of the veggie aisle". Kale contains betacarotene, calcium, folate, iron, magnesium, potassium, and vitamins A, C, and K in "far larger quantities than you'll find in most other vegetables."

The cholesterol-free veggie is incredibly beneficial for your body inside and out. Not only can kale be used to help digestion and elimination, giving your body a detox promoting optimal liver function- but the vegetable can be used to help you fight off certain types of cancer; give your skin better defenses against photo-aging; nourish your hair, skin, and nail from the inside out, and can also reduce dark circles under your eyes because of the high levels of vitamin K.

A few ways you can enjoy kale:
- Use raw kale leaves as salad
- Sauté kale with some garlic, olive oil, and lemon
- Roast it in the over for DIY kale chips to snack on
- Blend a kale smoothie;
4 oz. water
4 oz. unsweetened almond milk
1/2 frozen banana, cut into chunks
1 cup kale
1 tbs. coconut oil
1 tbs. shredded unsweetened coconut
2 to 4 ice cubes
1 packet of non dairy protein powder (optional)
Blend together until smooth and creamy
